Torrontés is Argentina's signature aromatic white, and Hervé Joyaux Fabre — a Bordeaux-born winemaker who arrived in Mendoza in the early 1990s as one of the country's first foreign boutique producers — grows his in the high-altitude Valle de Uco. Cool nights at elevation preserve the aromatics: white flowers, lychee, and a citrus snap that makes this style unusually versatile with food.
