Henri Vallet brought French bitters technique to Mexico City in 1882, arriving in the chaos that followed Emperor Maximilian's brief reign and never leaving. The same family has made this fernet to his original recipe ever since — cinnamon, clove, quassia wood, gentian root, and cardamom, individually macerated in sugarcane spirit from Veracruz, then blended and rested in stainless steel before bottling.

It stayed a purely domestic pour for over 130 years, ubiquitous in Mexican cantinas and essentially unknown outside them, until an importer traced a dusty, unlabeled bottle behind a Guadalajara bar back to the Vallet family in 2010. Rounder and less menthol-forward than Fernet Branca, with baking-spice warmth up front and gentian bitterness on the finish.
