Made from certified organic vineyards across California, Salad Days is a secondary-fermented sparkling wine — Colombard-dominant, undisgorged, and barely over 9% ABV. The production follows the méthode traditionnelle: spontaneous fermentation in stainless for 45 days, then a second ferment in bottle with sparkling yeast and organic sugar as tirage. Lees stay in the bottle, contributing a subtle savory, biscuity note to what otherwise drinks like a crisp, refreshing spring wine.
Andrew Jones started Field Recordings in 2007 as a side project while working as a vine nursery fieldman across the Central Coast — knowing every vineyard by foot before deciding which fruit to buy. Salad Days reflects that sourcing intelligence: blending certified organic lots for a consistent, genuinely low-intervention sparkling that doesn't ask you to overthink it.
