Filipa Pato is the daughter of Luis Pato — the Baga Rebel who revived Bairrada — and granddaughter of João Pato, the first to bottle wine in the region. She started her own project in 2001 alongside her husband, Belgian sommelier William Wouters, farming biodynamically and vinifying with indigenous yeasts.
The "3B" stands for Baga, Bical, and Bairrada — the three anchors of this wine. Grapes are harvested early, fermented on native yeasts, then aged nine months sur lies in bottle before disgorgement with no dosage. Bone-dry, minerally, and finely effervescent. James Suckling called it "a fun, juicy wine" at 93 points; Decanter reached 92, citing texture, elegance, and salinity.
