Flavien Nowack's family has farmed in Vandières since 1795, on the left bank of the Marne where clay, marl, and limestone soils give Pinot Meunier its singular brightness. Flavien converted parcel by parcel to certified organic farming starting in 2012 — studying under Guillaume Selosse in Avize and absorbing the grower-producer philosophy of letting the site speak. The "Sans Année" (S.A.) is his entry-level cuvée and his clearest argument for the appellation: 50% Meunier, 50% Chardonnay, 2021 base vintage with 10% reserve wines from 2012–2020, disgorged March 2024.

Vinified with a combination of native and estate-selected yeasts, aged in barrels and foudres, and bottled at 1g/L dosage — barely there. Flavien skips malolactic fermentation for all his base wines and uses natural yeast from unfermented grape must for secondary fermentation in bottle, which creates a characteristically lower-pressure bubble and a vinous, textural quality distinct from conventional Champagne. No chaptalization. No fining. No filtration.
