Stephen Dooley has made Flying Cloud out of Stephen Ross Wine Cellars in San Luis Obispo since 2003 — same infrastructure as his flagship estate wines, but built for everyday price points. For the Sauvignon Blanc, he pulls from Marfarm and Trestle vineyards along the San Luis Obispo Coast, harvesting by hand in late September. Cool coastal air and consistent marine influence are the whole pitch here; the vineyard does the work.
The 2023 ferments cold, mostly in stainless steel with a small barrel component for texture. The profile sits closer to the Loire than New Zealand — crisp and mineral-edged, the citrus and melon in front, a light herbal lift behind it.
