Aqua Nat is a piquette — an ancient, ultra-low-intervention category Tiago Sampaio revives by macerating the spent pomace from his Pet Nat production with low-pH water drawn directly from the vineyard. Fresh Alvarinho juice kicks off refermentation; the mixture is bottled before it finishes, capturing just enough fizz and color for a bright, barely-there drink at 5.5% ABV.

Light and slightly hazy, with lovely red fruits and a tartness that makes it almost impossible not to refill the glass. Joyful, unpretentious, and built for the moment — serve ice-cold and drink soon after opening.
