Fond Cypres Carignan 2025 750mL
FRANCE : LANGUEDOC-ROUSSILLON : CORBIÈRES
CERTIFIED ORGANIC : Carignan, Grenache
LIGHT-BODIED, CHERRY, JUICY ACIDITY, LONG FINISH, NO OAK
Laetitia Ourliac and Rodolphe Gianesini farm 15 hectares of calcareous soil and blue marl in Escales, in the northernmost part of the Corbières, and this red is one they make exclusively for their New York importer, Super Glou. Carignan and Grenache from a parcel chosen for its ability to ripen at low alcohol, seven days on the skins with native yeast, then aged in cement tanks — no oak, no fining, no filtering, 12% ABV.
Super Glou's note puts it in French: "cerise en nez et cerise en bouche... ça pinote." Cherry on the nose, cherry on the palate, and it acts like a Pinot. That's not what anyone expects from Corbières, least of all in 2025, a year of early heat, wildfires across more than 17,000 hectares of the Aude, and lower yields.
PAIRINGS :
| Grilled clams with garlic and parsley | bright acid and 12% alcohol keep up with shellfish; serve it a little chilled |
| Saucisson and country pâté | cherry fruit and fresh acidity cut the fat |
| Roast chicken with thyme | light enough not to bury the bird; the herbs echo the garrigue |
