Fonseca is one of the great historic Port houses, part of the Fladgate Partnership alongside Taylor's and Croft. Winemaker David Guimaraens sources from three quintas: Quinta do Panascal in the Tâvora Valley and Quinta do Cruzeiro and Quinta de Santo António in the Pinhão Valley. Grapes are foot-treaded in granite lagares — the traditional method prized for full phenolic extraction without green astringency — then aged twenty months in wood before bottling unfiltered at 99 g/L residual sugar.
The 2016 vintage was declared by 63 producers, one of the most widely declared Port vintages of the modern era and the first since 2011. A wet spring reduced yields by 25%, concentrating the remaining fruit. A four-week harvest window from mid-September through early October locked in what the trade is calling one of the finest Douro years of this generation.
PAIRINGS :
| Aged Stilton or Roquefort | The classic British Port pairing — salt and savory funk anchor the wine's natural sweetness |
| Dark chocolate (70%+) | Bitter cocoa meets the wine's plum and raisin depth; a textbook dessert match |
| Walnuts and dried figs | Concentrated dried fruit echoes the wine's wood-aged oxidative complexity |
