Made at Destilería La Fortaleza in the town of Tequila, the small hilltop distillery Don Javier Sauza shut down in 1968 and his grandson Guillermo Sauza brought back to life starting in 1999 — same brick oven, same tahona pit, same two copper pot stills.

Agave from Tequila Valley cooks for 36 hours in the stone oven, then gets 100% stone-crushed under a two-ton volcanic tahona, fermented in open-air wooden tanks with the family's own yeast, and double distilled in copper pots. The second pass comes off around 46%, not the 55–60% many brands run, because distilling close to proof keeps more of the agave. What you're buying is tequila made the pre-efficiency way, and it tastes like it.
