Gortinore founder Aidan Mehigan set out to make an Irish whiskey for people raised on bourbon, and the spec follows through: a corn-heavy 80/20 mash bill, triple distilled in the Irish manner, blended in the barrel.

It rests three years and a day in ex-bourbon casks, then spends six months in virgin American oak. That finish is the whole argument, because new wood at that duration pushes vanilla and sweet spice into a spirit that would otherwise read light and grassy.

Independent, no corporate parent, founded in 2019. Named for the natterjack, the only toad native to Ireland, which walks instead of hopping.
