FRANCE : LOIRE : VAL DE LOIRE
ORGANIC : Sauvignon Blanc
LIGHT-BODIED, WHITE PEACH, CITRUS, GOOSEBERRY, FRESH HERBS, NO OAK
Grand Fossil is the American label for Domaine Jean-Paul Balland — a sixth-generation family estate in Bué, in the heart of Sancerre. Since 2001, sisters Isabelle (winemaker, trained at the Dijon oenology faculty) and Elise have led the estate through a full organic transition, certified beginning with the 2023 vintage. This 2025 is their third organic harvest.
The Val de Loire is the estate's entry-level expression — the same certified-organic vineyards that produce the Sancerre, labeled under the wider IGP designation that allows fruit from across the Loire corridor. No oak at any stage; stainless steel from fermentation through bottling. What you get is Sauvignon Blanc at its most direct: bright citrus, white peach, fresh-cut herbs, and the clean linear acidity that defines Loire whites.
PAIRINGS :
| Fresh chèvre on crostini | the Loire classic — acidity cuts lactic fat; herbaceous lift echoes goat milk |
| Steamed mussels | crisp acidity against the brine; a natural Loire bistro pairing |
| Grilled asparagus | Sauvignon Blanc's affinity for asparagus; the Loire style handles it cleanly |
