Grapesmith & Crusher Columbia Valley Cabernet Sauvignon 2020 750ml
USA : WASHINGTON : COLUMBIA VALLEY
SUSTAINABLE : Cabernet Sauvignon
FULL-BODIED, DARK PLUM, CASSIS, EARTH, PEPPER, NEUTRAL OAK
The fruit comes predominantly from the Wahluke Slope — the warmest sub-region in Columbia Valley, where day-to-night temperature swings of 30–40°F preserve natural acidity long after the summer heat builds sugar. These sustainably farmed vineyards, planted in 2000 on original rootstock in wind-blown sand and clay, were developed by the multi-generational family that helped establish the Ancient Lakes and Wahluke Slope AVAs.
Winemakers Laurent Montalieu and Kendall Mix fermented the majority of the fruit in neutral barrels, then blended in a smaller lot that had gone through malolactic in 100% new American oak. Both portions aged on the lees for 13 months without racking — contact over extraction, landing a round, smoke-edged structure that drinks above this tier.
PAIRINGS :
| Grilled ribeye | tannin structure meets fat and char; the wine was built for this |
| Lamb chops with rosemary | herbal notes in the wine complement the seasoning without competing |
| Smoked brisket | smoke in the wine echoes the cook; dark fruit holds up to the richness |
