Greenhook Ginsmiths built their Greenpoint distillery around one idea: vacuum distillation at lower temperatures, which preserves delicate botanicals that would otherwise be cooked away. Their American Dry Gin — nine botanicals on an organically grown New York wheat base, led by juniper and elderflower — is mixed here with a proprietary tonic at a ratio they've engineered obsessively, then carbonated at 45 PSI throughout. Both the gin and the tonic are carbonated, so it holds up on ice better than any bar-poured version will.
