SPAIN : JEREZ : EL PUERTO DE SANTA MARÍA
Palomino
LIGHT-BODIED, TOASTED HAZELNUT, SEA SALT, DRIED APRICOT, NOUGAT, OAK
Gutiérrez Colosía has operated from the same riverside spot in El Puerto de Santa María since 1838 — the only sherry bodega on the Guadalete River quay, blocks from the Atlantic. That location means active flor year-round and a pronounced saline thread through every wine they make.
The Amontillado spends three years as a Fino under flor before the protective yeast is allowed to die, then a further five years in American oak under oxidative conditions — 8 to 9 years total in the traditional criaderas y soleras system. At 18%, it carries the maritime delicacy of El Puerto de Santa María: less austere than its Jerez counterparts, more precise. Peñín Guide 92, Wine Spectator 91.
PAIRINGS :
| Jamón ibérico | the classic: nutty oxidative character echoes the cured fat and salt |
| Aged Manchego or Comté | nut-on-nut — the wine’s hazelnut and the cheese’s crystalline bite find each other |
| Mushroom crostini or chicken liver pâté | savory brine and dried-fruit sweetness frame rich, earthy flavors |
