Niizawa Jozoten founded the Hakurakusei brand in 2002 around a single idea: sake that makes food taste better rather than competing with it. Made from Kura no Hana — a sake rice variety bred in Miyagi Prefecture — milled to 55%, this Junmai Ginjo carries the house fingerprint: clean, faintly citrusy, with a cut of acidity that keeps it fresh across multiple courses. Toji Nanami Watanabe has led production since 2018; under her watch the brewery has been named IWC Sake Brewery of the Year four consecutive times.
