Sancerre is Sauvignon Blanc country, but the Bourgeois family has spent ten generations in Chavignol making the case for Pinot Noir on these clay-and-limestone hillsides. The estate farms every hectare organically, certified since the 2023 vintage, and the rosé is the most direct way into that work.
The colour comes from direct pressing rather than a bleed: the fruit is sorted, destemmed, gravity-fed into vats and pressed straight off, so ripe skins give up their colour quickly. Fermentation runs cool in stainless steel at 15 to 18°C, then the wine rests on fine lees for three to four months, which is where the texture comes from. No oak at any stage.
