A bottled Old Fashioned split straight down the middle — three aged Caribbean rums from Jamaica and Guyana against three American rye whiskeys, one of them New York-grown — with fresh organic Brooklyn ginger macerated into the blend and a house bitters made for this recipe alone. Hand blended, hand bottled, hand sealed. The ginger leads, honey and orange oil follow, and a dry run of oak keeps it from reading sweet.

The name belongs to the Irish-born tailor at 23 Queen Street whose British-officer clientele talked more than they should have, to the benefit of Washington's side.
