Herve Souhaut 'Clos de Cessieux' 2023 750ml
FRANCE : NORTHERN RHÔNE : SAINT-JOSEPH
BIODYNAMIC : Syrah
MED-BODIED, BLUEBERRY, VIOLET, ANISE, BACON FAT, NEUTRAL OAK
Le Clos des Cessieux is a helical-shaped lieu-dit in St-Jean de Muzols — the heart of Saint-Joseph — where 32-year-old Syrah vines on granitic soil have been farmed organically since 2013. Hervé Souhaut's approach runs opposite to the extracted, age-worthy style the Northern Rhône is famous for: whole-cluster fermentation in stainless steel, punch-downs by hand, and 8 months on lees in neutral Burgundy barrels before bottling unfined and unfiltered.
It crackles with anise, blueberry, and pomegranate fruit, laced with a high-pitched violet hint and finish with a high-toned acidity and brisk mineral edge. It is a touch lean with a twinge of elegant stemminess holding the finish.
PAIRINGS :
| Grilled lamb chops with herbes de Provence | dark fruit and savory notes mirror the herbs; the wine's acidity cuts through the fat |
| Duck confit | the violet lift and lean body hold up to rich duck without being overwhelmed |
| Aged Comté or Gruyère | the stemmy, mineral edge finds a natural counterpart in nutty aged cheese |
