Kirkwall sits at 58° north — farther north than Moscow, beyond the reach of most trees, scoured by Atlantic wind from every direction. Highland Park has distilled here since 1798, drawing water from the Crantit Spring and drying a portion of its malt over Orkney's own peat. That peat is the key: ancient heather moorland rather than coastal bog, which means the smoke reads as floral and warm rather than medicinal. Twelve years in a mix of first-fill and refill Oloroso sherry casks (both American and European oak) builds the dried fruit and honey; the two oak types interact — European oak contributes chocolate and dark plum, American oak adds vanilla and a lighter sweetness.

F. Paul Pacult named Highland Park the "Best Spirit in the World" three separate times. The reason isn't any single note but the architecture: the honey and the smoke and the sea air balance rather than compete. At 43% ABV it's gentle enough for a weeknight pour and structured enough to reward attention.
