A bottled Negroni from Brunnur Distillery in Reykjavík, built on Himbrimi's own Old Tom gin — a sweeter, honeyed style made with wild arctic thyme, angelica and mountain honey — with a vermouth from Piedmont and a bespoke bitter from Veneto, blended in Iceland.

Old Tom makes a rounder Negroni than London Dry does: less juniper edge, more herb and sweetness against the bitter. The 375ml bottle holds a few rounds. Pour over one large cube, express an orange peel, done.
