Fruit from two of Washington's most distinguished sub-appellations: 60% from Red Mountain AVA — one of the state's warmest and most concentrated sites, known for small-berried, thick-skinned Cabernet with intense dark fruit and firm tannins — and 40% from the equally warm Wahluke Slope. Ten months in barrel, 25% new French oak, keeps the structure intact without dominating the fruit.
Maison Noir was founded in 2007 by André Hueston Mack — former Head Sommelier at Per Se and The French Laundry, and winner of Best Young Sommelier in America from the Chaîne des Rôtisseurs. The name is a hat tip to Training Day: "to protect the sheep, you gotta catch the wolf, and it takes a wolf to catch a wolf." 2,500 cases produced annually.
