FRANCE : BURGUNDY : CHASSAGNE-MONTRACHET
SUSTAINABLE : Chardonnay
MED-BODIED, BRIOCHE, CANDIED LEMON, GRILLED HAZELNUT, GINGERBREAD, NEUTRAL OAK
Chassagne-Montrachet sits just south of Puligny, sharing the limestone-marl slope that built the Côte de Beaune's white wine reputation — only with a bit more weight and earthiness to it. Drouhin's village-level Blanc draws from supply partners farming across the commune, assembled to a house spec that Véronique Boss-Drouhin has refined over decades.
The 2020 vintage came in early and warm — harvest started mid-August, the earliest since 2003 — delivering aromatic concentration alongside the higher-than-expected acidity that marks the year. Drouhin ferments in barrel without inoculated yeast, ages 14 to 16 months on roughly 20% new French oak, and allows malolactic to complete naturally. Structured and food-friendly, with the toasty, brioche-tinged richness of a warm year kept honest by that acid line.
PAIRINGS :
| Lobster thermidor | the wine's butter and hazelnut notes meet the cream sauce; acidity cuts the richness cleanly |
| Roast chicken with tarragon cream | classic Burgundian pairing — herb and brown-butter register tracks the wine's aromatics |
| Aged Comté | the cheese's nutty, crystalline depth matches the gingerbread and brioche notes exactly |
