Wiltwyck Spirits works out of a former auto garage at Greenkill and Wilbur avenues in Kingston, where Kyran Tompkins and his brother-in-law Jonathan Niles founded the company in 2022 and rebuilt the room by hand. Tompkins distilled at Tuthilltown and Denning's Point first. Karnavat is the house vodka: 100% New York-grown corn, which the state's farm distillery licence requires, carbon-filtered while the spirit is held below freezing, then cut to strength with ice instead of water.

The soda is that vodka with Catskill Mountain water, low-carbonation sparkling water, real sugar and all-natural flavors, and no high fructose corn syrup. The low carbonation is a deliberate choice in a category that usually competes on fizz, and ginger is where you notice it. Gluten free, 5.7% ABV, which makes it a session can rather than a cocktail.
