Kings County opened in the Brooklyn Navy Yard in 2010 — the city's oldest operating whiskey distillery — and built its name on pot-distilled, grain-forward American spirits. The mash is 80% organic corn sourced from Lakeview Organic in the Finger Lakes, with Golden Promise malted barley rounding out the bill. Fermented open-top with native yeast, distilled in copper pot stills, and left unaged: the base is a clean, clear corn whiskey before it becomes anything else.

Grapefruit peel and jalapeño are macerated separately in cheesecloth, then married into the whiskey — no artificial ingredients, no added sugar. The heat is quieter than the name implies; grapefruit leads as bitterness more than brightness, and the jalapeño registers as peppery sweetness rather than burn. The tequila parallel is real — this drinks well in place of a blanco anywhere citrus and spice make sense.
