This is not the Pinot Grigio you know from Alto Adige. Bojan Kobal gives the wine 36 hours on its skins — long enough to pull a salmon-pink color and a layer of texture, not so long it becomes an orange wine. The result sits in the narrow register between a fresh white and skin-contact territory: more presence and grip than the former, less tannin than the latter.

Six months on lees in stainless adds a discreet creaminess to the finish. Five percent of the wine sees a month in used 225L oak for structure rather than flavor. Clay-limestone soils in the Haloze Hills at 250m — the wine has a backbone that straightforward Pinot Grigio almost never does.
