Stephan Asseo spent 16 years making wine in Bordeaux before leaving France in 1998 in search of terroir that would let him blend without restriction. He found it on the west side of Paso Robles — calcareous limestone soils, high elevation hillsides, and cold Pacific air funneling through the Templeton Gap. The combination reads southern Rhône but tastes purely Paso.
Côte à Côte is his GSM statement: 37% Grenache, 32% Syrah, 31% Mourvèdre, aged 16 months across new French oak, once-used barrique, concrete, and amphora. The pluralistic élevage builds complexity without blurring the wine's cool-toned clarity. Five major critics clustered between 94 and 97 points — Jeb Dunnuck called it "a killer bottle, concentrated and powerful yet weightless." Wine Advocate landed at 96+; Vinous at 95.
