Paul and Raymond Lillet founded their house in Podensac in 1872 and launched Kina Lillet in 1887, back when a quinine tonic wine was as much a health claim as a drink. The quinine is still in there, just quieter: the recipe was reworked with the University of Bordeaux oenology institute in 1985, the bitterness and the sugar both came down, and the Kina came off the label.
The blend runs 85% Bordeaux white wine to 15% fruit liqueurs, built from sweet orange peels out of Spain and Morocco, bitter green oranges from Haiti, and Peruvian cinchona bark macerated in brandy. After that it is handled like a Bordeaux, fined, racked and filtered, then rested in large neutral oak before bottling.
Serve it cold, in a wine glass with an orange slice or over one big cube. Beverage Testing Institute 90 pts, Gold Medal. Keep it in the fridge once open, same as vermouth.
