Dom. de l'Estoile is the house project of AP Wine Imports, built on a promise that's harder to keep than it sounds: source real, sustainably farmed fruit from family estates across southern France and price it like an easy pour, not a splurge. The name comes from “estoile,” old French for the six-rayed star that gives this cuvée its imagery, an homage to the starry Provençal coastline where a certain aviator-author once wrote his most famous story. The blend, Cabernet Sauvignon, Syrah, Cinsault and Grenache, comes off traditional stainless equipment at a recently modernized estate, no oak, no drama, just clean fruit built for a warm afternoon.
