Living Roots makes this Pét-Nat the old way — picked early from multiple Finger Lakes sites, bottled mid-ferment, and left to carbonate naturally in the bottle. No secondary culture, no dosage, no filtration. The result is hazy, lightly effervescent, and alive in the glass in a way that still or traditional-method wines aren't.
Sebastian Hardy's sixth-generation Australian winemaking instincts meet upstate New York cool-climate Riesling here — bright citrus and white flower up front, a gentle savory lees note underneath, and that signature Finger Lakes electric acidity on the finish.
