Living Roots Wine & Co. is a two-continent family project — Sebastian and Colleen Hardy farm sustainably in both the Finger Lakes and South Australia, making wines with native yeast and no additions at either end. The Session Spritz White draws from Shale Creek Vineyard on Keuka Lake, built around old-vine Elvira — an American hybrid grape rarely given this kind of attention — alongside Riesling from the region.
Charmat method, with a genuine twist: Living Roots uses unfermented grape juice for tirage rather than added sugar, and stops secondary fermentation early to hold some residual sweetness. Fine-grained bubbles, real stone fruit character, a chalk-mineral finish. Eight percent ABV. No sulfites added.
