Lanzarote's vineyards look nothing like a vineyard — vines grow one at a time in hand-dug craters punched through meters of volcanic ash, each ringed by a low stone wall against the trade winds. The island was never touched by phylloxera, so Los Bermejos works ungrafted, pre-phylloxera Listán Negro — the same vine known as Mission in California and País in Chile.
The base wine is pressed whole-cluster in a pneumatic press for barely any color, then finished traditional method — 15 months on the lees, zero dosage. What lands in the glass is pale salmon, bone dry, and carries the same volcanic, saline edge that runs through the estate's still wines.
