Fermented in temperature-controlled stainless steel and left on its lees — the yeast cells that settle after fermentation. Regular stirring keeps the wine fresh while adding a creamy texture and length that unoaked Chardonnay rarely carries on its own. No wood, just cool-climate fruit and the quiet complexity that comes from contact with the lees.
Lothian sits on the Palmiet River in the Elgin Valley, a cool-climate pocket hemmed in by mountains and close to the South Atlantic. Richard Kershaw MW and Dudley Wilson work with minimal intervention — handpicked fruit, clonal integrity, nothing added that the vineyard hasn't put there.
