Luis Moya Tortosa and Gonzalo Celayeta started this project with a single idea: make a Garnacha aged exclusively in clay tinajas manchegas — ancient amphoras from La Mancha. Sourcing the vessels proved so difficult the whole thing seemed impossible, a chimera. The name stuck. The wine followed.
The grapes come from 65-year-old vines on the terraced hillsides of San Martín de Unx, a stone-walled Romanesque town in Navarra's Baja Montaña where the Guerinda mountain range brings altitude and daily temperature swings that keep the fruit precise. Certified organic, hand harvested, spontaneously fermented, aged roughly ten months on lees in clay — no wood at any stage.
