Macallan has distilled on Easter Elchies Estate along the River Spey since 1824. The house philosophy centers on wood — up to 80% of the final flavor attributed to cask alone — and the Double Cask makes that argument directly: Oloroso sherry-seasoned American oak for vanilla warmth and lighter sweetness, European oak for the darker dried-fruit backbone more traditional to Macallan's Sherry Oak range.

The 12 sits between those two character types — less sherried than the classic Sherry Oak, more fruit-forward than you'd expect from a malt of this reputation. Mellow in structure, it's the expression that converts bourbon drinkers and rewards Scotch newcomers. Wine Enthusiast 93 pts.
