The Amour d’Hérout Doux is a keeved cidre — a style made by depleting the juice of nitrogen and pectin before fermentation begins, causing the fermentation to arrest naturally at 2.5% ABV with residual sugar intact. No added sugar, no artificial arrest, no pasteurization. Just heritage Norman apples and a technique that has been practiced on the Cotentin Peninsula for centuries.
Marie-Agnès Hérout is the third generation to run this family estate in Auvers, Manche, and the woman behind the AOC Cotentin appellation — which she pushed through INAO in 2016. The orchard has been certified organic since the 1970s. Distributed in New York by IPO Wines.
