Spourtiko is Cyprus's most obscure white native — low alcohol, mineral, saline, and almost impossible to find outside the island. Makarounas is the only estate winery in Cyprus, making wine exclusively from privately-owned ungrafted vines in Paphos, some of them centenarian. The island has never had phylloxera.
Whole-bunch pressed, spontaneously fermented, and aged eight months on the lees with twice-weekly bâtonnage. The lees program is the defining production decision — it pulls texture and aromatic complexity from a grape that can otherwise be neutral. The result is bright, citrus-driven, saline, and honest about its 10.5% ABV.
