Michel Laroche planted Mas la Chevalière near Béziers in 1996, convinced that the Languedoc hills — Mediterranean sun, limestone soils, and the cooling influence of the Hérault valley — could produce Sauvignon Blanc with real precision. The 2024 vintage delivered it: a cool, wet spring followed by a dry summer and a gradual September harvest brought the bright aromatic profiles the variety needs.
Four months in stainless steel keeps the fermentation character intact. No oak, no battonage, nothing to blunt the citrus edge.
