From Castellet i la Gornal on the coast-influenced edge of Penedès, Can Xa makes Cava the old way — nine months on lees in dome-shaped caves dug thirty feet into the hillside, naturally maintained at 57°F year-round. More yeast-contact depth than most entry-level Cavas dare to give you at this price.
100% Pinot Noir for the Rosé, which is less common than it sounds. The classic Cava Rosé grape is Trepat; Can Xa uses Pinot, and the profile shows it — wild red fruit, a gentle spicy note, and a fine persistent bead that reads closer to Champagne Rosé than to most Spanish bubbly.
