A dry vermouth styled after Chambéry — the alpine French region whose vermouths are lighter and more floral than Italian versions, and the standard reference point for a proper dry Martini. Cory Fitzsimmons spent years behind the bar at Union Square Cafe, where the program sourced local ingredients everywhere except vermouth. That gap became Method Spirits.
The base is Vidal Blanc from Swedish Hill Winery in the Finger Lakes, fortified with Catawba brandy from Finger Lakes Distilling. Twenty-seven botanicals — wormwood, angelica root, citrus peel, coriander, chamomile, damiana, spearmint, licorice root, marjoram, clove, and nutmeg — macerate into the base, producing a fresh, herbal vermouth suited to Martinis, 50/50s, Gibsons, or simply over ice as an aperitif.
