Method comes from Cory Fitzsimmons — former Head Bartender at Union Square Cafe — who left in 2018 to build a sweet vermouth worth using. The base is Valvin Muscat and Cayuga White, both Cornell-bred cold-hardy hybrids, vinified at Swedish Hill Winery in Romulus and then fortified with Catawba brandy from Finger Lakes Distilling.

Twenty-nine botanicals — wormwood, orris root, bitter orange, chamomile, tarragon, hyssop, fennel seed, clove, nutmeg, and Madagascar vanilla among them — plus high-quality caramel for texture and depth. Torino-style in intention, Finger Lakes in origin.
