Derrumbes — "landslide" — sources its San Luis Potosí expression from wild Agave salmiana, a variety native to the semi-arid highlands of the region rather than the Oaxacan valleys where most commercial mezcal originates. Critically, the agave is cooked in above-ground hornos rather than underground pits, producing a mezcal that is distinctly not smoky — chalky, mineral, and herbal instead. Tahona milled, naturally fermented, twice-distilled in small copper pot stills.
