Mijenta's Symphony barrels aren't off-the-shelf — staves pulled from four American forests (Minnesota for citrus lift, Missouri for clove and cinnamon, Pennsylvania for coconut and vanilla, Virginia for body and minerality) are toasted over a slow chaufferette with a water spray to open the pores. Eighteen months builds an añejo that reads more structured than most of its peers: Robb Report found "rich notes of chocolate, cherry, deeply roasted agave" alongside citrus and botanicals; InsideHook described it as "creamier, dessert-like...pain au chocolat in a glass."

Maestra Tequilera Ana María Romero sources exclusively from Los Altos — Jalisco's red clay Highlands, leaner and more aromatic than the valley floor. Mijenta is the first agave spirits producer to hold B Corp certification, and this release is additive-free. At 90 proof, there's enough presence to carry the oak without turning extractive.
