Dirk Niepoort built the Nat'Cool! project around a single premise: make wines that are natural, affordable, and sold in 1-liter bottles. The Bairrada was the first entry in the lineup — 100% Baga, served chilled — and it makes a quiet argument for what this grape can do when you stop trying to tame it.
60% comes from organic-minded growers throughout Bairrada; the remaining 40% from Quinta de Baixo, Niepoort's own biodynamic estate in the heart of the DOC, where 40–100-year-old vines grow in calcareous clay over limestone. Two days on the skins, indigenous yeasts, stainless steel from start to finish, 11.5% alcohol. We think he did a damn good job with this one.
