Niepoort Bairrada Nat'Cool! Tinto 2025 1L
PORTUGAL : BEIRAS : BAIRRADA
ORGANIC : Baga
LIGHT-BODIED, WILD STRAWBERRY, RASPBERRY, CRUSHED FLORALS, SCRUBBY HERBS, NO OAK
Dirk Niepoort built the Nat'Cool! project around a single premise: make wines that are natural, affordable, and sold in 1-liter bottles. The Bairrada was the first entry in the lineup — 100% Baga, served chilled — and it makes a quiet argument for what this grape can do when you stop trying to tame it.
40–100-year-old Baga vines grow in calcareous clay over limestone at Quinta de Baixo and across the DOC. Native yeasts, stainless steel from start to finish, no oak, 12% alcohol. Treve Ring gave the 2025 91 points in Gismondi on Wine. We think he did a damn good job with this one.
PAIRINGS :
| Leitão (roasted suckling pig) | the regional pairing — Bairrada's signature dish meets its signature grape |
| Charcuterie and cured meats | fresh acidity and fine tannins cut through fat cleanly |
| Grilled sardines | Atlantic minerality mirrors the wine's coastal character |
