Kato Kahachiro Brewery has been making sake in Tsuruoka since 1872 — in the Ohyama district, where Mt. Chokai and the Asahi Mountains bracket a stretch of coast that has been famous for sake since the early Edo period. Yamagata is Japan's only prefecture with its own sake appellation. Nigori means unfiltered: rice lees remain in suspension, clouding the liquid. Shake gently before pouring to reintegrate them.
Most Nigori lean sweet. This one doesn't. SMV +6 puts it firmly on the dry side — closer in structure to a still white wine than to the dessert-adjacent Nigori you may have had before. The comparison the importer reaches for: Alsace Pinot Blanc in softness, Belgian Witbier in texture. Both are right.
