Or Haganuz sits at the foot of Mount Meron in the eastern Upper Galilee, inside a cooperative village that owns every business within it — the winery included. The Amuka fruit comes off high-elevation sites between Meron and Dalton at roughly 790 meters, hand-harvested, fermented with pump-overs, and given six months in French oak.

Semi-sweet, but built like a real wine rather than a kiddush afterthought. Fourteen percent, full-bodied, the oak showing up as coffee grain rather than vanilla. Mevushal and certified Kosher for Passover. Serve it lightly chilled — around 57°F the sugar reads as ripe fruit instead of syrup.
