Ovid's Experiment series is a laboratory in wine form. The W5.8 blends eight varieties from five California appellations, including Carneros and Sonoma Mountain, into something that reads less like a blend than a thesis on what California white wine can be.
The central question: can vessel size push Sauvignon Blanc toward its reductive, flinty character? Carneros fruit went into stainless drums; Sonoma Mountain fruit got two days of skin contact before 500- and 600-liter neutral puncheons. The result confirmed the hypothesis, and the technique has since become OVID's standard practice for Sauvignon Blanc. Winemaker Austin Peterson: "subtle notes of reduction give it great depth and intrigue."
