Pedro Parra y Familia Cinsault 'Imaginador' 2021 750ml
CHILE : BÍO BÍO : ITATA VALLEY
ORGANIC : Cinsault
LIGHT-MEDIUM BODIED, FRESH STRAWBERRY, TOMATO, SALINE, MINERAL, NEUTRAL OAK
Pedro Parra — “Dr. Terroir,” the Chilean soil scientist who has dug more than 22,000 soil pits across the globe — makes his own wine in the valley where he was born. The Imaginador draws from four growers farming old, ungrafted Cinsault on Itata’s decomposed granite soils, vines ranging from 45 to 70 years old. No extraction, no pigeage, no remontage: only the cap gets wet.
Fermented 100% whole cluster with indigenous yeasts and aged eleven months in oak and concrete, the result is exactly what Parra’s soil obsession points toward — terroir without intervention. Ripe red fruit and mineral aromas; the palate is savory with notes of tomato, cherry, and saline, finishing on a faintly smoky note. Wine Advocate 94 pts.
PAIRINGS :
| Herb-brined roasted chicken | bright acidity and mineral edge lift the herb notes without overwhelming delicate poultry |
| Lamb merguez sausage | the wine’s faint smoky note bridges with the spiced sausage; freshness cuts through the fat |
| Aged manchego or sheep’s milk cheese | chalky tannins and bright acidity cut through fat cleanly; a classic match for mineral-driven reds |
