Created by Creole apothecary Antoine Amédée Peychaud in New Orleans in 1838, Peychaud’s is the essential ingredient in the Sazerac — the rye-and-absinthe cocktail that defines the city’s drinking culture. Lighter and more floral than Angostura, with prominent anise and cherry notes, it’s indispensable for the Sazerac, effective in the Vieux Carré, and a useful counterpoint to bitter orange bitters wherever brightness is needed.
